-- Domaine Delmas is produced at the property of Domaine la Batteuse, a 50 acre, family owned vineyard that has grown considerably over the past 20 years. It is located in the tiny village of Antugnac, about 45 minutes from the famous city of Carcassonne. Grape growing is the only economic resource of the village, which has just 250 inhabitants, and 4 producers. The microclimate is ideal for growing white grapes. The vines are planted on clay, calcareous slopes exposed to the south or southwest. The Domaine Delmas AOC Limoux is a handcrafted labor of love. The freshly pressed white wine is immediately put into 2-3 year old French oak barrels, where it is left in contact with the fine lees and stirred every 8 days for 12 months. The breeding on fine lees with a regular batonnage (gentle agitation of the wine, which puts the yeasts back in suspension) makes it possible to exploit all the aromatic potential of the grapes.
