How do you know if it is a "good year" if you don't follow wine growing news? Or is the year even important when you are tasting wine?
Dr Mic:
The truth is, even if you follow wine news they will tell you that every year is a great vintage! It is easy to understand that no one in the industry is ready to say: "This is a bad year, stop drinking!". It usually takes a few years before the truth about a vintage emerges, by which time 90% of that vintage will have been drunk. But really, for most wines in most regions, modern day technology will erase the differences, mask the imperfections and put out of the market the non marketable wines. Since there is way more wine produced than consumed you can be sure that only the best make it to your table! The vintage is a factor when you start buying wines that are probably out of the common man's (pocketbook) range and where it can make the difference between a good wine and a fabulous wine. This is the case essentially in Bordeaux where the weather can vastly differ from one year to the next. It is true nevertheless that for a given wine each vintage will have its own characteristics and flavors. And this is probably more so with organic wines which will reflect more closely their natural conditions.

"What does a wine trailing in a glass, I believe known as legs, have anything to do with its quality? Does it mean anything, does it tip you off to age, flavor, etc?"
Dr Mic:
Legs or tears are traces of wine sticking to the glass when one swirls it around the glass. Glycerol, one of the alcohols present in the wine, is responsible for that effect (you know about glycerine, don't you?). A wine rich in that alcohol will probably be smooth and round on the palate. Since it is a solvant for a number of volatile compounds, it will also harbor a richness of flavors. Beyond that....!

"Does sniffing first affect the "taste" in the mouth? I suspect it does, but perhaps you can advise the sensitivity transmission."
Dr Mic:
The 4 or 5 savors felt through the tongue (sweet and salty, acid and sour, savory being a recent discovery) go through a different neural pathway. On the other hand, the nerve endings in the upper part of the nose go directly to the brain and can discern thousands of different chemical compounds! In other words the nose (your olfactory tract) will be responsible for the biggest part of your sensory evaluation of the wine.

In their July 12 issue there was an article on the benefits and drawbacks of ethanol use as well as one on the uncertain future of the traditional wine growing regions due to global warming.

Frankly, if we were thrilled by the prospect of that production we were less so by the end result which clearly shows we can't be experts in all areas or at least that we need to gather some new skills! MAINTAINING YOUR COMPUTER, PART TWO |

COMPUTER MAINTENANCE FOR DUMMIES
For those of you who are still new to the computing world I remember cursing my computer and the makers of such supposedly magnificent tools for not handing down some very simple advices to keep them running somewhat satisfactorily. Here are some very basic ones like the ABC of cleaning up the innards of the beast! (Windows XP, Pentium III)
A/ CLEAN UP your disk drive.
Depending on usage you want to regularly erase unnecessary clutter from your hard drives. It takes a few seconds and frees useful space even though it is less of an issue with recent big drives.
How to? : Go to Start/Programs/Accesories/System Tools/Disk Cleanup and click OK (If you have to select a drive it means that you have partitioned it and are way past this advice!). Then select the various boxes and launch the cleanup which should go pretty fast unless you have never done it before!
B/ GET RID OF SPYWARE and all other little programs that can some times seriously slow down your system. These have been implanted to follow you around and frankly, you don't need them!
How to? : Go to the Lavasoft website, maker of a FREE software that gets rid of the unwanted programs and download it. Then run it after downloading the latest updates, you will be surprised to see how many things it finds on your machine! Select them and click them to oblivion! Run the program once a month after updating it.
WARNING: this program is recommended by numerous sites and it has worked very well for me; however, as with any download, you should thoroughly explore their website before making the decision for yourself. This is merely a happy user's suggestion.
C/ DEFRAGMENT YOUR DRIVE! After you've cleaned it and cleared it of unwanted presences, put some order in the big mess! This will help your computer tremendously to find the files it needs in the shortest possible time.
How to? : Go to Start/Programs/Accesories/System Tools/Disk Defragmentation and launch it. It will analyze your disk and recommand (or not) the operation. Again, if you've never done it, it will take some time! Do it once a month more or less. You should see some pretty good improvements on your system.

I remember the time it took me to acquire some basic computer skills and I suppose some of you may be at the same level I used to be! I suspect that most of our readers have better things to do than taking the time to understand why these damn machines do not work as promised!
